HACCP Manager

Job Summary
Lead cross-functional team for development and the sustainability of the HACCP plan and prerequisite programs. Manages and audits HACCP program compliance internally and audits external suppliers, Champions process improvements and resolution of food safety and quality issues. Ensure compliance with applicable food laws and regulations of Macau. Maintain the stability and effectiveness of food safety system. Ensure that the competence of his/her Hygiene Officers to execute daily duties.
Responsibilities
  • Gather and collect scientific data for establishment and improvement of food safety programs.
  • Regularly organize and conduct internal audits for food safety system.
  • Communicate with external interested parties for issues about food safety programs.
  • Review and analyze food safety related issues including customer feedback to identify areas for improvement.
  • Review the effectiveness of implementation of food safety programs.
  • Conduct and co-ordinate all hygiene inspections by Macau Government.
  • Conduct regular HACCP food safety and quality meetings.
  • Communicates new product introduction, product improvement initiatives, new or alternative vendors and any related trials.
  • Provide thorough diagnostics and interpretation of technical laboratory results.
  • Ensure that Training Manager conducts regular training regarding food safety and food hygiene to all related parties.
Requirements
  • Higher Diploma in Food Technology or above, preferably Bachelor’s degree in Food Science.
  • Minimum 5 years solid experience in food hygiene related areas
  • Professional knowledge of HACCP and ISO22000 food related regulations
  • Good knowledge of cleaning chemicals, operating equipment and cleaning methods
  • Fluent in English, Cantonese and Mandarin
  • Good command of computer literacy
  • Good communication skills and a good team player
  • Able to work with an F&B multi national team as well as relating departments such as procurement, receiving, engineering, housekeeping, etc.
